This week: Beetroot

With it’s amazing colour and wide range of uses, it’s no wonder lots of us love beetroot! Plus it’s an excellent source of folate (source: Conde Nast. 2012.)

Beetroot is easy to grow and will be happy in any kind of soil. Dig in some organic matter when planting the seeds and keep them moist as they sprout. Beetroot will be ready to pick in 14-16, and don’t be afraid to thin out the plants as they’re growing.

Use freshly grated beetroot in dips and cakes. When roasting leave the skin on to keep them extra tender. And keep the leaves as they can be eaten like a spinach.
